Featured on the menu at Noma during the restaurants’ short stint in Sydney, and this year’s Champion aquaculture fish at the Sydney Royal Show, this is the most exciting aquaculture fish from Australia to hit the markets in a long time!! Unlike other farmed fish, grouper has the classic firm white flesh, that flakes when cooked, so keenly sought after from seafood lovers.
To date supply of this amazing fish has been primarily focussed on 600g to 1kg, however feedback from our customers has been that a larger 3kg plus fish more suited to fillet portions and cutlets would support growth in the restaurant market due to more cost effective utilisation of the fish.
As a result of the feedback we are pleased to advise there is a growing and more regular supply of 3kg plus fish for the foreseeable future, and we would welcome the opportunity to discuss this with you.
