Our ocean-finished oysters are carefully nurtured in nutrient-rich estuaries before being transferred to the open sea, where they develop their signature flavour, texture, and quality.

Raised in the sheltered waters of Coffin Bay, and Twofold Bay, our oysters begin their journey in ideal nursery conditions. Once they reach maturity, they are moved to offshore leases where the ocean’s influence takes over—stronger currents, higher salinity, and clean, nutrient-rich waters enhance their taste and structure.
